Pumpkin Chocolate-Chip Muffins

This morning William said, "I saw a band-AID in the trash." And I went, "Mm." And he said, "I said 'AID' like that because of my spelling words"---which are all words with AI in them. So I praised him for being smart, and then told him his shirt was on backwards.

You definitely want to come over: I baked pumpkin chocolate-chip muffins, and I've got a pot of coffee brewed.


Pumpkin Chocolate-Chip Muffins
1 stick (1/2 cup) butter, melted
1 cup canned pumpkin
1 cup packed dark brown sugar
2 eggs
1 teaspoon vanilla
2 and 1/4 cups flour
1/2 teaspoon salt
2 teaspoons baking powder
1/2 teaspoon cinnamon
3/4 cup chocolate chips

Preheat oven to 350 degrees F. Line 12 muffin cups with muffin papers.

Mix the melted butter, pumpkin, brown sugar, eggs, and vanilla in one bowl. Mix the flour, salt, baking powder, cinnamon, and chocolate chips in another bowl. Combine the two bowls and mix just until you don't see powder anymore. Scoop into muffin cups and bake 25-30 minutes.

Mmm I do want to come over, especially since I finished my last mini-loaf of pumpkin chocolate chip bread over the weekend. Some people say pumpkin and chocolate don't go together and to those people I say "I'll eat your share."

Those are my absolute FAVORITE muffins in the world! I made some oatmeal-applesauce muffins last weekend, and the kids were all, "WHY didn't you make the pumpkin muffins, Mom?!" No more experimenting for me, I guess!

I forgot to say thank you for posting the recipe in cups and teaspoons which makes it not also more international due to imperial/metric differences in countries, but it also makes it super practical for someone who doesn't have a scale like me!

Oh, I ADORE those muffins. Got the recipe off SundryBuzz last year, and I have made them twice this season already! MMMmmmmmmmmm. Will have to make more this weekend.

Oh my GOSH do those sound awesome! And easy. And so Thanksgiving-y. Do you put anything on those when you eat them? I feel like cream cheese might be good, but I'd have to try it myself just to be sure. :-)

ZOMG Swistle I LOVE YOU!! I was saying the other day to my mom that chocolate chips would be great in pumpkin bread and she thought I was crazy. No I'm gonna prove her wrong!!! Your recipe uses butter too while my pumkin bread recipe uses oil . . yours is sure to be tastier :)

Sometimes I imagine that we are neighbors and after you put the kids on the bus, I just walk on over to your house and we sit at the kitchen table and drink pots of coffee and eat lots of yummy baked goods. And the non-school children would play and we would just laugh over their heads and chat about everything.
Sigh.
I wish we were neighbors.

You know, I am suspicious of pumpkin and I think it is time to admit that I've never actually tried a pumpkin-flavored baked good. . . my husband ordered pumpkin pancakes this weekend it made me feel a little gaggy. But people are soooo excited about the pumpkin muffins that I may just break down and try to make some. May. I'm thinking about it.

Bunny- I imagine that TOO! I seriously sometimes think, "Oh, I should invite everyone over for reals!" and then realize "Oh." Like, we don't all actually share a fence.

Kelsey- It also works with bananas (about 2 of them) instead of pumpkin. Or you can use 1 banana and 1/2 cup pumpkin if you want to sort of EASE into the pumpkin idea.

You're right, I do want to come over! I suppose I could settle for picking up a can of pumpkin and making these muffins this weekend myself. They could be a reward for making it through what feels like the longest work week ever. Although rewarding my hard work by giving myself more things to do is really just giving myself more work. If only Target sold your freshly baked pumpkin chocolate chip muffins I'd be all set!

I made these last night while we were watching the election coverage and they are fantastic! Thanks so much for posting the recipe. I'm helping my daughter learn to read by having her read out the recipe, pausing so I can do each step. (That's my justification for the muffins and Halloween cookies we've baked lately - heh!)
